I have found a great recipe for Keto Cake Pops for Valentines Day. I just love single-serving desserts that are easy to make and somewhat guilt-free. If you’re like and like desserts that are in pre-portioned servings, then these cake pops are for you. Not only are they adorable and delicious, but you can customize them for holidays and specific celebrations.

The secret to make these Keto Cake Pops is using the Swerve vanilla cake mix for your batter. After that, use sugar free frosting and chips. This a a great recipe to make with kids! Let’s make some now!

Ingredients

  • 1 box Swerve vanilla cake mix prepared to package instructions
  • Sugar Free Frosting (Example: Pillsbury Creamy Supreme Chocolate Fudge Sugar Free Frosting)
  • 2 cups sugar free white chocolate chips
  • 2 tablespoons coconut oil
  • Sugar Free Holiday Sprinkles
  • Cake pop sticks or paper straws cut in half

To Prepare:

  • Preheat the oven to 350 degrees.
  • Mix the Swerve cake mix according to the package instructions, then pour into an 8 inch cake pan.
  • Bake the cake for 25-30 minutes, remove from the oven, and allow it to cool completely.
  • Crumble the cake into a mixing bowl. Add the frosting mixture and stir to combine.
  • Form the cake mixture into 24 evenly-sized balls. Stick a cake pop stick or half of a paper straw into the center of each cake pop ball.
  • Let the cake pops chill on a tray for 30 minutes.
  • Add the white chocolate chips and coconut oil to a microwave-safe bowl and melt in the microwave until smooth.

Shape Into Hearts

To create the heart shape, place a heaping tablespoon of cake into your palm and form it into a ball. Flatten out the ball slightly, then pinch one end together to form a point. On the opposite end, press your finger into the ball to create the indentation at the top of the heart. I used a toothpick to refine the shape.

Don’t worry if your hearts aren’t completely perfect, because the candy coating will cover most imperfections.

Smooth out any little bumps, then place the hearts on their sides on a parchment-lined platter or baking sheet. Refrigerate the hearts for 2 hours or freeze for 45 minutes to 1 hour. This will firm up the dough. To add the sticks just use some of the melted chips to dip lollipop stick and then insert into the side of a heart. Wipe off excess around the stick, if necessary. Repeat until all pops have a stick and then place in the freezer for 15 minutes.

DECORATING THE CAKE POPS

After 15 minutes, it’s time to cover the pops with the candy melts. You can be as creative as you want to on this step. Melt the chip and then dip each heart into the melted chips (reserve about ⅓ cup for decorating the pops). Use a spoon to pour candy over any areas that do not get covered. Gently tap the lollipop stick against the side of the bowl to remove excess candy, and then carefully drag the bottom of the heart across the top of the bowl to catch any drips.

Place the dipped pops back on the tray. (Tip: if your cake is dark, double-dip the pops if the cake shows through.) Once all of the pops are dipped and the coating has hardened, it is fun time decorating them. I used the left over melted chips and put into a small plastic bag bag. Cover a flat surface with parchment paper, then snip a little corner off the plastic bag. Hold a cake pop in one hand and plastic bag in the other hand. Drizzle melt over one side of pop and then do other side. It helps if you start your drizzle off the pop, and it will look a little neater.
