Appetizers that are DIY cookies, what could be better? I love Girl Scout Cookies, but you cannot always get them when the cravings comes. I have found three recipes that you can recreate some of your favorites. Five minutes, no baking, and they are the perfect stand-in. Girl Scout cookie season is far too short. Once you’ve run through of your stockpile of boxes, it just feels like there are too many cookie less months to get through.

Girl Scout Cookies

Yes, make your own stand-ins to get you through those lonely months. The cost of a box of Girl Scout cookie helps support important programming for the Girl Scouts of the USA, However, we drag our feet on spending between $5-6 on mass-produced cookies. Eventually we say, Okay, we’ll do it for the children, who are, after all, our future”. I still always run out before the next season to purchase the originals again. So, I make my own version of my favorites: thin mints, samoas, and tagalongs.

Thin Mints

This particular recipe is not only an excellent Thin Mint replica, it’s also quick, no-bake, and only uses two ingredients. Good news all around, right? Even I can not mess this recipe up. The dilemma -cookie crunch without baking. So just rely on crunchy, buttery Ritz crackers to do it for you. Get the mint flavor from the second ingredient and you have your very on Thin Mint cookie all year long.

Thin Mints

Again, just 2 ingredients! Thin Mints are the most popular Girl Scout cookie for obvious reasons….. they’re delicious. You won’t believe how easy they are to make at home. Ritz Crackers and Andes Mint Baking Chips are the ingredients. Basically, just melt 1/4 of the bag at a time stirring to keep smooth. Melt in 30 seconds increments in the microwave. Dip the crackers and let dry. Enjoy.

Samoa Cookies

No-Bake Copycat Samoa Girl Scout Cookies. If Samoas happen to be your favorite with the salty cookie crunch, chewy caramel, and sweet bite of chocolate and coconut. This version requires stove-time, but no oven-time. Again the base of the cookie is a Ritz cracker. The overall appearance may not be a perfect match, but the taste is almost identical.

Samoa Cookies

Ingredients:

  • 1 sleeve of Ritz Crackers (24 crackers)
  • 1 package (11oz) of caramel bits
  • 3 tablespoons of heavy cream
  • 2 cups shredded coconut, toasted*
  • 2 squares chocolate candiquik (melting chocolate) of 1/2 cup semi-sweet chocolate chips

To Prepare:

  • * Toast coconut in large pan, low heat 3-5 minutes, stirring frequently, until lightly browned.
  • Parchment paper on baking sheet, put Ritz crackers 2″ apart.
  • Caramel candies and heavy cream in microwaveable bowl-microwave in 30-second increments, stirring until smooth.
  • Fold in toasted coconut and put mixture on the Ritz crackers and spread evenly.
  • Microwave chocolate in 30-second increments, stirring in between until smooth. Let cool 5 minutes. Put into a sandwich bag and cut end off to be able to drizzle chocolate over cookies.

The buttery cracker is topped with a layer of chewy caramel and toasted coconut. Then the finale is a zig-zag drizzle of melted chocolate.

Tagalong Cookie

They say if something seems too good to be true, it probably is, but these DIY Tagalong Cookies are as real as it gets. They’re so quick, so easy, and just so good. They’re just the thing to satisfy that all too common Girl Scout cookie craving, whenever it may hit.

Tagalongs

Ingredients:

  • 1 sleeve of Ritz Crackers (24 crackers)
  • 12 oz of candy melts dark chocolate
  • Peanut butter to coat the tops of the crackers

To prepare:

  1. Microwave chocolate in 30-second increments, stirring in between until smooth.
  2. While chocolate is melting, spread a thin layer of peanut butter on Ritz crackers.
  3. Dip the crackers into the chocolate to coat, lift out, and shake off excess. Can use a candy fork to make easier.
  4. Place dipped cookies a parchment paper lined baking sheet, put Ritz crackers 2″ apart to set and cool.

Now just sit back and enjoy your DIY cookies.
